Entrees
Chicken
Wellington:
Wild mushrooms
duxelle, tender breast chicken, wrapped in pastry, baked
to a golden brown and served atop a pool of red wine
demi glace and accompanied by roasted new potatoes and
maple glazed carrots
Bourbon Street
Chicken:
A beautiful chicken
breast marinated in our special “Jack Daniel’s” bourbon
marinate and char-grilled over mesquite wood for a
wonderful taste, served with a special “Jack Daniel’s”
sauce with peppers and onions, pecan rice pilaf and
fresh steamed broccoli
Florentine:
A tender chicken breast topped with ham, spinach and
swiss cheese and covered with a mushroom sherry sauce,
served with a saffron rice pilaf, sugar snap peas and
baby carrots.
Italian:
A grilled marinated chicken breast topped with home-made
tomato sauce and topped with Mozzarella and parmesan
cheeses, place upon a bed of linguini and served with
sautéed broccoli.
PORK
Medallions of
Pecan-herb crusted Pork Loin: Tender Medallions of Pork loin incased in a harmony of pecans and fresh
chopped herbs, roasted to perfection and served atop a
pool of pinot noir demi-glace served with lyonaise
potatoes and green beans
BEEF
Wellington:
An individual replica of the classic version, a tender
filet of beef tenderloin incased in pastry with a wild
mushroom duxelle, baked to a golden brown and served
atop a pool of merlot demi-glace, served with roasted
new potatoes and green beans almandine.
Medallions:
Herb crusted, roasted tenderloin of beef served atop a
bed of portabella mushrooms and a pinot noir demi-glace,
with Fettuccini tossed with a lemon butter sauce and
served with sautéed sugar snap peas and Baby carrots
Filet Mignon:
A tender 6 oz filet grilled to a medium and served atop
a pool of merlot-balsamic demi-glace, served with
duchess potatoes and sautéed seasonal vegetables.
Prime Rib Roast:
A 10oz slice of our “Famous” herb crusted prime rib
cooked to a beautiful medium, served with au jus and a
creamy horseradish sauce, potatoes au gratin, and Maple
pecan glazed baby carrots.
Mixed Grills
Classic:
A beautiful petit filet of beef tenderloin cooked to a
medium, marinated chicken breast and smoked sausage
served with a port demi-glace with wild rice pilaf and
sautéed vegetable.
Creole:
A beautiful petite filet of beef tenderloin, marinated
quail and (3) large gulf shrimp all marinate in our
“Jack Daniel’s” bourbon marinate, grilled to perfection
and served atop a pool of “Jack Daniel’s” sauce with a
generous helping of dirty rice and sautéed squash.
